new to this stuff, but a Diehard gamer from the 80's . :)
Anway just built a mame machine and running gameex and a jpac and mame.
Just wanted to know if theres an easier way to map the keys for selecting games, exiting games etc.

I can play the games no problem, but trying to explain to my future gamers ( 5yrs old and 10) the multiple button pushed to select and move around gameex/mame is exhausting
is there an easier way?

Also how does one save there high scores ? I didnt see anything in the setup for it?

There is not really an "easier way". You can change the key mappings via the setup wizard but you could try running GameEx in "Game Launcher" mode which does change the interface to make it more simple. You could also turn off the "Game Info" page so there is only one press involved launching a game.

As for high scores its a little in depth and you will need to research further but in a nutshell you need to compile your own version of MAME for this.
