First of all, we need your configuration and your log files to troubleshoot this problem closer. Your issue is too vague for now. Please read http://www.gameex.in...o-ask-for-help/ and post the relevant files here so we can have a closer sight of what is happening.
This will be a starting point, but a necessary one.

Since it's difficult to find older version of MAMEUI, unless you have the latest 144 romset, I think it's better for you to manually download the MAME version that match with your romset and re-set paths and everything MAME-related in Setup Wizard.

Update your game list in GameEx.
Don't try to launch MAME directly, it is a command line application and doesn't have a GUI interface. Use GameEx to launch your games istead, and let us know what happens.

I’ve only dabbled with ROM Center so don’t really have good ROM Center tutorial suggestions. They’re certainly out there if you care to look though.

Just from reviewing the log file, I would suggest going through the MAME section of the Setup Wizard and setting the paths for the items showing missing in the log file. You will need to make sure that you have setup the paths in MAME first so that both MAME and GameEx are looking for the same files in the same locations.

If you haven't set up you file paths in MAME, then you have some work ahead of you. Since GameEX is a Front End, it doesn't control your emulator. It is imperative that you setup the paths for your ROMS, Snaps, etc. within each emulator you care to run through GameEx from within each emulator outside of GameEx.
Generally, you will want to setup MAME to run alone. Once you have it running and playing your ROMS via the emulator, you will then need to setup GameEx as previously noted.
